At the heart of this sprawling property is CordeValle’s esteemed 7,360-yard, award-winning golf course, designed by internationally acclaimed golf architect Robert Trent Jones Jr. who defines it as his finest creation. Bistro Clos features items such as the crab melt with avocado and melted mozzarella on sourdough and the New York steak sandwich with beer battered onion rings, in addition to sliders and quesadillas. Schedule a tour where you’ll learn more about its production and hospitality facilities from one of Clos La Chance’s esteemed sommeliers which includes insight on the entire wine making process. The winery is open to the public and showcases specimens that reflect the diversity of varietals that have popularized the Northern Central Coast region, explains Rutigliano.

Key to the hospitality program at Cordevalle is newly appointed Head Chef Goran Basarov who utilizes a similar personalized approach to his cooking and menu as the resort does in its guest relations. Chef Goran oversees the menus at One Iron Bar, Lion’s Peak Grill and Il Vigneto.

“Chef Goran has over 10 years of global hospitality experience and incorporates international flavors into his cooking in a new and unique way,” says Rutigliano. “Previously serving as the Executive Chef at PlumpJack Group, he is skilled in utilizing locally sourced ingredients to bring out fresh bold flavors from around the world.”

The most stand-out dish is the pizza from their wood pizza oven and the house made pasta, according to the Managing Director. “Many of our guests pair their dishes with a wine from our extensive wine list or opt for our signature drink, the CordeValle Heat Margarita.”

Lastly, new to the resort are monthly wine series dinners in which guests are pampered to the nines with curated four-course dinners paired with the perfect wines.
